One of New Zealand's oldest native plants is the Manuka Tree. As part of the trees defences the leaves carry an aromatic oil that has antiseptic, anti- fungal, antimicrobial and anti-inflammatory properties.
It was a valuable plant used by the early Maori of New Zealand to treat a variety of ailments. The leaves were used to reduce fever and calm internal complaints. Early explorer Captain James Cook upon trading with the local Maori used the leaves as a replacement for English Tea hence the name "Tea tree". He found the tea relieved the crew's scurvy symptoms.
Instructions: Use one teaspoon per cup. Place tea in a teapot or a tea filter. Add freshly boiled water and allow to infuse for 3-5 minutes dependant on your preference. The leaves can also be used as a rub of meat and infused into oils for cooking. Once the pack is opened keep sealed and away from heat and moisture.
